The second edition of PASTA ACADEMY was held in Bogotà from November 20 - 24.
Almost one hundred participants from all over South America, from Mexico to Chile as well as numerous representatives from Brazil, took part in the event.
PASTA ACADEMY is a practical instrument aimed at supporting pasta producers in South America.
The scientific and technical approach was the sole evaluation perspective, with the precious cooperation of Professor Alessandra Marti of the Department of Food Sciences, University of Milan, Dr. Alessio Marchesani, R&D dept Food Technologist and Eng. Renato Dall'Agata, Technical and R&D Director at FAVA S.p.A., supported by his team Eng. Luca Alberghini, Eng. Luca Pirani and Dr. Ezio Di Martino.
Our partners Sircem, BS, Landucci and Martini, provided important insights on flour feeding, plant engineering, production, storage and packaging processes, which are all fundamental to running a modern pasta factory.
Michele Storci, also present at the event, illustrated the future corporate strategies of FAVA S.p.A. after the merger with Storci. Today, Fava S.p.A. has excellent qualitative and quantitative standards with a range of equipment covering continuous and discontinuous dry pasta, couscous, fresh pasta and ready meal process lines. This vast range of equipment, combined with Fava Latino America’s on-site assistance, makes Fava an important reference for Central and South American pasta producers.
